If there’s a dessert that perfectly combines festive flavor, warmth, and comfort, it’s plum pudding with cream. This traditional treat is rich with dried fruits, spiced to perfection, and served with smooth fresh cream that melts in your mouth.
We’re going to guide you step by step, so you can confidently create this dessert—completely alcohol-free—and still impress everyone at the table.

Ingredients We Need

For the pudding (serves 8):
- 100g unsalted butter (or 75g butter + 25g plant-based suet)
- 100g dark brown sugar
- 100g plain flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spices (cinnamon, nutmeg, cloves)
- 2 large eggs
- 150g fresh breadcrumbs
- 100g golden raisins
- 100g raisins (soaked in 2 tablespoons orange juice or water overnight)
- 75g currants
- 1 small apple, peeled and finely chopped
- Zest of 1 orange or lemon
- 100ml orange juice or apple juice
- Optional: 50g candied peel
For the cream:
- 200ml fresh cream
- 1 teaspoon vanilla extract (optional)
Special equipment:
- 5- or 6-cup pudding basin
- Baking paper and foil
- String for tying

Step 1: Preparing the Pudding Basin

We start by greasing the pudding basin with butter. Cut a piece of baking or wax paper to fit the bottom of the basin and brush it with butter. This ensures the pudding won’t stick.

Step 2: Mixing the Pudding

1. Cream the butter and dark brown sugar together in a large mixing bowl until soft and fluffy.
2. Gradually add the eggs, one at a time, beating well after each addition.
3. Fold in the flour, baking powder, and mixed spices until smooth.
4. Gently mix in the breadcrumbs, soaked raisins, golden raisins, currants, chopped apple, and orange/lemon zest.
5. Pour in the juice and stir to combine.
6. If using candied peel, fold it in last.
The mixture should be thick, fragrant, and ready to fill the basin.

Step 3: Filling and Wrapping the Pudding

1. Pour the pudding mixture into the prepared basin and smooth the top.
2. Cover the top with a greased piece of wax or baking paper.
3. Tear a sheet of baking paper and foil large enough to cover the basin, place the foil over the paper, and make a small pleat in the center for expansion.
4. Tie a string around the edge of the basin with a handle on top for easy lifting.

Step 4: Steaming the Pudding

1. Place the pudding basin on a heatproof rack inside a large saucepan.
2. Fill the saucepan with water halfway up the side of the basin.
3. Cover tightly and steam gently for 6 hours, checking the water level every hour and topping up with hot water if needed.
Once steamed, remove the foil and paper, wipe the edges, and replace with fresh paper if storing. The pudding can be served immediately or stored in a cool place.

Step 5: Preparing the Cream

We lightly whip the fresh cream until soft peaks form. For extra flavor, we can add vanilla extract. The cream should be smooth and slightly thick, perfect for pouring over the warm pudding.

Step 6: Serving Our Plum Pudding with Cream

1. Reheat the pudding gently by steaming for 20–30 minutes or microwaving for a few minutes until warm.
2. Place the pudding on a heatproof serving plate.
3. Pour fresh cream generously over each slice.
